    • Husk and wash
    • blanch (1.5 in - 6 minutes, 2 in - 8 minutes, > 2 in - 10 minutes)
    • cool
    • cut from cob
    • 1.5 ears per serving
  • Eggplant
    • Peel
    • Slice to 1/3 inch thick
    • Prepare 1/2 C lemon juice to 1 gallon water
    • blanch for 4 minutes
    • cool for 4 minutes
  • Summer Squash
    • Slice to 1/2 inch thick
    • blanch for 3 minutes
    • cool for 3 minutes
